Cooking classes to improve your health
My plant based story
A couple years ago, I was like most 50ish year-olds- knowing I need to eat better, lose weight, exercise. My wake up call was a phone call… a breast cancer diagnosis.
On the call I decided two things- no more sugar and to have no fear over the situation. I didn’t understand a lot of what the gal was saying, but when she said “Chemo” I asked why. She said to shrink the tumor. I decided I was going to shrink it. I had no idea how, I’m just an optimist with a positive mindset.
When I told my sister, she suggested a lifestyle change so that night I switched to plant based. At the time, I was a foodie that had taught Standard American Diet cooking classes for 10 years.
I contacted all my holistic friends for their advice. I prayed. I felt strongly that chemo was not the best choice for my body.
One month to the day, my MRI measured my tumor half the size of my ultrasound. It was shrinking! The doctors disagreed with my comment, but I was going to keep doing what I was doing.
Months later I chose to have the tumor surgically removed. Results showed that it spread to a lymph node. After a blood test with my naturopath showed no cancer in my body, I again chose to not go through chemo or radiation. (I am still being monitored by my surgeons and naturopath.)
After all I’ve learned, I really feel that what you eat plays an important part in your health. I had a lot going on as I worked through those first few months of meal prep, looking for nutritious recipes that were easy to prepare and full of flavor while detoxing, exercising, lowering my stress and going to doctor appointments.
I’ve found a bunch of tasty recipes and have tested them on my husband, who has now joined me eating Whole Food Plant Based.
Even my burger loving son in law had seconds of the mushroom burger.
Eighteen months later and still cancer free, I’m here to share my favorite recipes with you for your crazy good health!
